Simple Cheesy Æbleskivers + A Giveaway!

I LOVE LOVE LOVE æbleskivers (little round Danish pancake-like pastries–read more about them here).

Last month I told you about my favorite food finds from the Foodbuzz Bloggers Festival, which included æbleskivers  from Aunt Else's Æbleskiver.  Chad Gillard, the president of Aunt Else's, and his wife were at the Foodbuzz bloggers festival making æbleskivers with their æbleskivers mix and promoting their cast iron aebleskiver pan.

I was totally coveting the pan–a gorgeous heavy 9-hole cast iron pan (my own æbleskiver pan has only 7 holes).  Imagine my delight when I received an email from Chad a few weeks ago offering to send me a starter kit to review!  Um…yes?!?!

Aunt Else's was established in 2008 as a way of sharing the family æbleskiver recipe passed down by Else (Andersen) Jacobsen and Florence (Andersen) Henriksen.  The company was named in honor of Else, and the æbleskiver pan they sell is modeled after Else's own æbleskiver pan.

When I received my starter kit (the Starter Kit includes Aunt Else's 9-Hole Cast Iron Æbleskiver Pan, Aunt Else's Organic Æbleskiver Mix, a handle hot pad, and a stainless steel chopstick for turning the æbleskivers as they bake), I started out by seasoning my pan.  When it was finally ready (I'm very impatient when it comes to getting to eat my favorite treats!), I whipped a batch of cheesy æbleskivers using Aunt Else's mix and the pan.  These are so easy to make.  All you do is mix up some æbleskiver batter and make the æbleskivers, adding a 1/2-inch cube of cheddar cheese.  When they are finished cooking, I like to top them with a bit of minced parsley and some grated cheese.

So what did I think of my Starter Kit?  The pan is definitely an upgrade from the one I've been using.  It is much heavier–a huge benefit because the pan maintains its temperature much better, making it easier to cook perfect æbleskivers.  The holes are also slightly bigger than the holes in my pan, which I loved.  And then, of course, there's the benefit of having 9-holes instead of 7!  The mix was delicious, making a wonderfully flavored batter.  I love that they use organic ingredients.

Oh my! My mouth is watering just looking at this post! I would definately make my first batch with cheese! I am a savory food lover! And i'm not going to lie I may even dip them in some homemade ranch dressing! and in that case I would have to eat them in the car on my way to the gym!

These look scrumptious.  I just bought a round aebleskiver pan.  The depressions are fairly small but it's heavy at least.  Can't wait to try it out.

I grew up eating them for special occasions.  I think they taste best with strawberry jam.

Wow, I haven't heard the word aebelskiver since I was a kid! Back in the 70s my Mom was on a "new food" kick and started making all sorts of weird and wonderful things. I remember the aebelskivers particularly because a) they never worked very well and b) she kept going on and on about her amazing new pan. I am pretty sure we never did get a very good batch of skivers out of that pan and I am almost as sure that she still has it kicking around somewhere. I wonder if she would give it to me….

My hubby bought me a pan last year for Christmas.  Smartly he went for a cheap one to see if we even enjoyed the unknown treat.  Unfortunately cheap is a nightmare when it comes to adbleskevers.  The pan just doesn't cook evenly and and you can never accomplish that 3 1/4 turns.  They taste okay, just not pretty.  So if you're going for it, spend a little money and get the cast iron – OR win one here :)  That's what I"m hoping to do!  I love mine with berries inside.  Blueberries, blackberries, strawberries or raspberries.  We even did some left over cranberry sauce morning after thanksgiving!  YUMMMM

I haven't made aebelskivers for a long time, but ironically I have been thinking about them lately and then I found your blog today. Love it!  I always made them with applesauce and maple syrup, but iIcan't wait to try them savory with cheese and herbs. Thank you for such a great idea.

My sister-in-law told me about this drawing and I just had to enter.  I've only had aebelskivers once and loved them.  I have no idea how to make them or what the possable varieties are but I can imagine a pumpkin pecan would be good.  My husband has never had them, I think he would be sold on some pumpkin aebelskivers.

I'm Danish, and I have never heard of putting cheese in æbleskiver?!?!
Here in Denmark, they are served with jam and powdered sugar on the side – and that's the only way they are served!
Plus, we only eat them in December, it's a Christmas tradition.

What I love the most about this whole thing, is that everybody considers these to be Danish pancakes – I’m from Denmark, so I can tell you that æbleskiver (also, there’s no ‘s’ at the end, our language is weird that way! :-D ) are almost only eaten during christmas, usually at get-togethers with “glögg,” a warmed-up wine mixture with cinnamon and other spices. We usually eat them without apples in them, but with powdered sugar and blackcurrant jam. Also, I have a neat trick for you – chopsticks aren’t the best thing to use, to turn them over with. My grandmother taught me to use knitting needle, which is far easier than a chopstick, if you ask me! :-)

Go forth and make all the æbleskiver (“ehh-blehh-skee-ver” – saw the pronounciation on the packet. If you think you should pronounce like the guy in the videp? Don’t. :-D) you can!
