Happy December!! This is my favorite time of year. I love the sights, sounds, smells, and traditions that are wrapped up into December and early January. Here on LFM you’re going to be getting a dose of that, plus some ways to survive this season of rich foods, with recipes that will help you “lighten up” and get a head start on some of those New Years resolutions.
To kick off the holidays this year, I’m sharing a holiday cookie recipe for chocolate toffee meringues over on Oh…scratch that (formerly Budget Gourmet Mom). These cookies are gluten and nut free, for those of you with food allergies! Oh…scratch that is written by, Krista, a dear friend of mine who I’ve known since I was 10 years old. If you’ve never been over to her site, it’s time to go!
In other news, today is also the start of a new campaign I’m working on with Discover Endive as one of their new “OnDivas” as a brand advocate to highlight California endive and educate consumers about this versatile, nutritious and delicious vegetable. Go check out the other OnDivas!

Look at those! I’ll take 4,000.
Yummy! Perfect holiday cookies. If its healthy, I don’t mind stuffing more than usual ;)
Those look amazing! I am heading over to get the recipe now!
What an awesome variation on a very old favorite! I will definitely be making these. Like this afternoon.
Will the meringues still turn out well if I substitute splenda for the sugar? Has anyone tried it?
Rachael – this cookies look delicious! I think this would be a great recipe to try in the Ninja 1100 Blender since it has an attachment for making meringue. Maybe I’ll get a chance to try them this weekend.
That looks so good.
Love this recipe. Definitely going to make some this holiday. :) Thanks for introducing me to Budget Gourmet Mom’s blog. What a lovely blog she has.
I love hard mergingue and this just looks out of this world – very nice. Love Budget Gourmet mom!
Love them! So pretty and christmassy :D
Oh these look delicious! And yay to them being gluten free!
That looks like snow! So pretty :) Perfect for the season…
I’m not usually keen on meringues, but these look fabulous!
i posted a comment on the other site, but not sure if you’re checking that and i’m hoping to make these tonight!
these look amazing and i love that you can “bake” them overnight! i think you just gave me my winning cookie for a cookie exchange this weekend. :) question – i’ve never made meringue, when you say gradually add sugar to the egg whites, do you continue mixing it or do you fold it in, or ?
Well, well, well ~ I’m with your first “comment maker” (I’ll take 4,000!) These do look quite incredible and since I just treated myself to a new Kitchen Aid stand mixer I think I’ll give them a try. Or . . . I see that Fuji Nana was going to be whipping up a batch or two so maybe she’ll be bringing me a little treat when she comes to visit! :-) Thanks for a great post Rachael. Happy Holidays to the Hutchings Family.
I know you are a master of toffee so this follows that quite nicely. GREG
you’ve had me at Chocolate toffee. :)
Eveything about these makes me happy. I’ll take them all, if that’s not too greedy. Also, did I see a commente with fuji nana? Super cute!
Wow, these cookies look really delicious. All the right stuff!
I can’t seem to find this recipes any more. Does anyone happen to have a copy? I’ve made them before and they are fantastic!
The link for this recipe is not working. Any way to get the recipe? Thank you!
Thank you for letting me know! The author of the blog has changed the name and URL of her blog…updated!
