Strawberry Mint Tea

Happy Monday everyone!! As we transition from summer into fall, this is the perfect time to grab the last bits of summer fruits and vegetables and preserve them for fall and winter.  I few years ago I “borrowed” my mom’s old food dehydrator (circa early 1980s) to use for something and then kept on using it.  This past Christmas my awesome in-laws gave me a new dehydrator, as a combo Christmas/birthday present, that has been on my wishlist for a few years now—an Excalibur dehydrator.  A few months ago I received a review copy of The Dehydrator Bible by Jennifer MacKenzie, Jay Nutt, and Don Mercer, and that’s when I really began using my dehydrator.  Before that I was doing some basic dehydrating, but I found it frustrating to constantly be searching online for different dehydrating temperatures and ideas.  The book was exactly what I needed.  So I thought since I felt that way, some of you might feel the same!

The Dehydrator Bible

The book starts out going through everything from fruits and vegetables to meats and beyond, giving specific directions on how to prepare them for dehydrating, giving dehydrating temperatures and times, and then finishing by explaining how to store the items once dehydrated.  Then the rest of the book focuses on recipes that use those dehydrated items.  The book is basically a gold mine of information and my copy is already dog-eared from all the use it’s been getting!

Dehydrator projects

One of the sections in the book that I thought was really fun was a section of ideas on handmade gifts that use dehydrated foods.  I whipped up a batch of strawberry mint tea using the recipe in the book, and thought it would be fun to share it with you!  After you brew yourself a cuppa, order a copy of the book!

Strawberry Mint Tea

Ingredients:
1⁄4 cup crumbled dried mint 50 mL
1 tbsp finely chopped dried strawberries 15 mL

Directions:
1. In a bowl, combine tea leaves, herbs and/or fruit as called for. Transfer to a jar with a tight-sealing lid, a decorative bag or a tin. Seal tightly and let stand for at least 1 week to let flavors blend. Store in a cool, dark place for up to 1 year.

2. Write out these directions on a recipe card to attach to the package:
To brew tea, add about 1 tsp
(5 mL) tea blend for each 6-oz
(175 mL) cup of boiling water.
Let stand for about 5 minutes
or until desired strength.
Strain through a sieve into cup.
