Avocado Nori Roll

Happy last day of February!  To send the month out with a bang I am sharing a second super easy snack that includes my beloved avocados—California Avocado Nori Rolls.  Part of why I love these so much is because I can cut up a bunch of veggies at the beginning of the week, put them into air-tight containers, and store them in the fridge.  Then all I have to do is pull them out, cut up an avocado and some nori sheets, grab some mayo (or any other sauce I happen to have on hand) and set everything out for the kids.

If you do the prep ahead of time, this snack requires almost no work on your part.  In fact, most of the work will be done by the kids, since they will be assembling their own!  If your child doesn’t like nori, you can also use lavash, tortillas, or whatever else they love.  You can grab the recipe over on The Scoop blog!

Don’t know why I never thought of this before. So easy. Did this with my kids today and they’ve already asked to do it again tomorrow. Thanks for another great idea.
