Scotcheroos: No holiday is complete without treats!

The Fujis are back home again (we got back late yesterday afternoon)! We had a great trip. It’s always nice to be with family, but it’s also nice to be home sleeping in my own bed again! Spending holidays with family is always especially fun, and the 4th of July was no exception. We met up with Mr. Fuji’s extended family at a local park for food and fun. We played a little bingo,
made and launched some soda bottle rockets (our team won with our rocket soaring highest into the sky . . . it helped that my FIL is an engineer, hehehe),
enjoyed watching the fly over of the military jets in formation headed for one of the fireworks spectaculars in the area,
and setting off some of our own fireworks.
It is my personal belief that no holiday celebration is complete without a good treat. My MIL came through this time with a fabulous (easy!) twist on rice crispy treats: Scotcheroos. The recipe combines rice crispy treats flavored with peanut butter and a chocolate butterscotch frosting for a sweet chewy treat.
The best part about this treat is that it can be whipped up in a matter of minutes, leaving you with more time to play with friends and family!

MIL’s Scotcheroos

1 cup sugar
1 cup light corn syrup
1 cup peanut butter
6 cups Rice Krispies cereal
8 oz. semi-sweet chocolate chips
11 oz. butterscotch chips

1. In a large saucepan, combine sugar and corn syrup; bring just to a boil over moderate heat. Remove from heat; stir in peanut butter. Mix in cereal. Press into buttered 13×9-inch pan.

2. Melt chocolate and butterscotch chips together over hot water (or in the microwave). Spread over cereal mixture. Chill in the refrigerator until firm, about 15 minutes. Cut into squares and serve.

We make scotcharoos at my house all the time, but ours are different! I simply melt butterscotch chips and peanut butter together and then stir in the rice krispies. They are delicious but yours sound good too, I might have to switch up my scotcharoos and try yours sometime!

I can't make scotcheroos, I would eat the entire pan myself. Maybe I just need to half the recipe…. I would feel much better about just eating half a pan!

I agree with Amber. I would eat the entire pan. So how about YOU make a pan and I'll come over and eat yours???

LOVE these! I make them with Special K cereal and we call them Special K bars… they sound more healthy that way, right? *wink wink* I think I'll try it with Rice Krispies though… when we have the Special K cereal left over no one eats it but they would eat the Rice Krispies!

I. LOVE. SCOTCHEROOS!! My mom makes them all they time. They are one of my favorite treats!!

Oh my. Those look awesome, I need to try them out! I have to agree, you need a treat on a holiday. Without that, it's just a day off.

Looks good! I sure do miss the 4th of July festivities, but looks like we'll be in the States next year for them – we're moving Stateside!

I'll have to bookmark this – I think I'll try it with honey – I just love the honey/PB combo.

I don't remember the last time I tasted anything with butterscotch. :) Mmmm.

I always love the differences between different countries!

In Australia, our rice krispies are called rice bubbles (although we still have snap, crackle and pop as mascots for some reason!) and we make chocolate crackles with them.

Chocolate crackles are made by mixing rice bubbles, melted copha, desiccated coconut, icing sugar and cocoa powder and then spooning them into butterfly cake cases and refrigerating them.

You can't buy chocolate crackles at a store here, but I was wondering if you can buy rice krispy treats in supermarkets in the US?

P.S Anything with chocolate and butterscotch added, gets my thumbs up :)

I LOVE these! I have them on my blog, and decided to melt the butterscotch separately as a design on top…NOT again. It definitely tastes better when the butterscotch is mixed up with the chocolate.
I also LOVE the name, Scotcharoos…better than plain ole' peanut butter rice krispy bars!
