Park Avenue Potluck Virtual Dinner Party–Warm Mushroom Rolls

Today you are invited to feast with your eyes at a virtual potluck dinner party hosted by Kelsey of The Naptime Chef.  Kelsey has gathered a group of food bloggers and writers together to give you a sneak peak into the beautiful pages of a beautiful new cookbook and to celebrate a worthy cause.
Today, the book Park Avenue Potluck CELEBRATIONS is being released nationwide.  This book is the follow-up to the best selling cookbook, Park Avenue Potluck.  The book was created and authored by members of The Society of Memorial Sloan-Kettering Cancer Center (MSKCC) and offers advice on how to celebrate in style with a compilation of sensational recipes, entertaining ideas, party-planning tips, and personal anecdotes from New York’s most celebrated hostesses.  All of the photographs in the book were taken inside Park Avenue Apartments and Country Homes.
Not only is the cookbook beautiful and filled with tons of wonderful information, but it supports a cause that I feel strongly about.  A portion of the proceeds from the sale of the book will provide funding for patient care, research and education programs at Memorial Sloan-Kettering Cancer Center.  Founded in 1946 by a group of pioneering women, The Society strives to bring comfort and care to improve the quality of life of patients treated at the Center.  The lives of many people I know have been affected by cancer, and I’m sure that this is true for many of you.  Eleven years ago this month my dad’s brother passed away from esophageal cancer.  Several other members of my extended family have battled cancer.  It’s a battle that many people around the world have fought and are currently fighting.  I find it very appropriate that proceeds from a cookbook will be supporting that battle–as we feed our bodies, sustaining life, we can feed the cause and sustain the lives of others.
I am bringing Warm Mushroom Rolls to the dinner party.
 
These little bite size rolls have a slightly crispy and toasted outside and a rich mushroom filling on the inside.  The delicious flavorful filling will make both vegetarians and omnivores happy.  The rolls can be made ahead and then reheated in an oven right before your party, leaving you free to get the house ready instead of stressing about making the appetizers!

Warm Mushroom Rolls

Makes 60 rolls

1 medium onion, chopped
1 shallot, chopped
3 tablespoons chopped flat-leaf parsley leaves
12 ounces white mushrooms
7 tablespoons unsalted butter
1½ tablespoons heavy cream
2 teaspoons Worcestershire sauce
Salt and freshly ground black pepper

1-pound loaf firm sandwich bread (about 15 slices)

1. Place the onion, shallot, and parsley in a food processor and pulse until finely minced. Remove from the processor, place the mushrooms in the food processor, and pulse until finely chopped.

2. Melt 2 tablespoons of the butter in a large skillet over medium heat, add the mushrooms, and sauté until lightly browned and no liquid remains in the pan. Transfer to a bowl. Add 1 tablespoon of the butter to the pan, then add the onion mixture and sauté until it starts to color. Add to the mushrooms in the bowl and mix with the cream and Worcestershire sauce. Season with salt and pepper. Preheat the oven to 375 degrees Fahrenheit.

3. Remove the crusts from the bread.  Use a rolling pin to roll each slice flat.  Place a heaping tablespoon of the mushroom filling over one side of the bread, then tightly roll up the bread with the filling.  Melt the remainin butter.  Use some of the butter to brush a foil-lined baking sheet.  Place the rolls seam-side down on the baking sheet.  Use the remaining butter to brush on the mushroom rolls.  

4. Place in the oven and bake for about 25 minutes, until the bread is lightly toasted.  Use a serrated knife to cut each roll in 4 pieces, arrange on a platter, and serve.

**The finished hors d’oeuvres can be made in advance and reheated for about 10 minutes at 325 degrees Fahrenheit.

Yum… It was lots of fun participating in the potluck, and such a great cause. The mushroom rolls look delicious! Can't wait to see the whole cookbook… I'm thinking it will make a great Christmas present this holiday for some of my relatives, too.

I love that you can make these ahead and just reheat. Who wants to scramble around making appetizers just before a meal begins?
