Hoppy Easter!

Hoppy Easter Fujiphiles! Are you doing/eating anything special today? Later today we are driving out to the Fuji grandparents’ house for Easter dinner. Some of my extended family will also be there, so we are definitely looking forward to it! I have made my carrot spice cake for dessert, but this time I made it a triple-decker using three 8-inch round layers. I also doubled the recipe for the cream cheese frosting so it would be deadly gooey to please Fuji Papa. Mmmmm, can’t wait to slice off a piece and dig in!

I LOVE Easter candy. In fact, Easter candy is probably my favorite seasonal candy of the year. My favorites are PEEPS,
Cadbury Creme Eggs,
and Cadbury Mini Eggs.

I’m curious–what are your favorites?

Yum, I love Jelly Bellys. I try not to buy candy usually, so I love the excuse to splurge on all of those flavors! I just made a lemon pound cake for tonight’s dessert from one of the Cook’s Illustrated cookbooks – American Classics. It looks so tasty. I can’t wait to cut into it. I am serving it with some macerated strawberries and whipped cream. We are going non-traditional this Easter and having pulled pork bbq, baked beans, cole slaw and cornbread. Yum!

reese’s peanut butter egg and I think brach’s chocolate egg (the blue ones). I used to put the blue coloring onto my lips like lipstick or stick out my tongue to see how blue it was…weird, I know…happy easter!

Oh, and forgot to mention…. I’m about to hit the kitchen and bake some cupcakes… can’t decide whether to try plain, cinammon and apple or chai cupcakes today…. First time to bake in the oven in our new place (it’s a little old…), so wish me luck!

Mini eggs are the best! I’m working in a shop that sells them so I have eaten waaaaay to many this year. Have a good time with your family!

mmmm… Cadbury creme eggs… mmmm… Its probably a good thing for my waistline that I don’t know anywhere in Tokyo that sells them! (and if there is somewhere, please, for the sake of same, DON’T tell me!)

I love those dark chocolate footballs. and dark chocolate rabbits and bars. and creme eggs too… but I have not had one in 10 years. but I still love them anyway.

I am a cadbury mini egg fan. BTW I have never seen that 42 oz bag! I also have eaten my fair share of Reese’s eggs this year!

The only thing better than double the cream cheese frosting would be triple the cream cheese frosting. I’m willing to be a taste-tester for that. How about it? La Fuji Papa

Cadbury creme eggs (the mini ones). I love peeps, but have you ever roasted one like you would a marshmallow? Absolutely the best!
