Pork Stroganoff: Why it occasionally pays off to be sleep deprived.

Last week when I was planning out this week’s dinner menus I asked Mr. Fuji if there was anything he’d like me to make. He told me that he would love it if I would make his mom’s hamburger stroganoff. I pulled out the recipe and added the ingredients to my shopping list. When I went to make the stroganoff on Wednesday night, I pulled out the meat and realized that instead of one pound of ground beef, I had somehow managed to grab one pound of pork sausage. Squirrel was napping, so I couldn’t leave to go back to the store and correct my mistake, and if I didn’t start dinner soon it wasn’t going to be ready in time. I decided to go forward with the stroganoff and just use the pork sausage.
Fortunately the stroganoff turned out fine. In fact, I was really glad that I had made the mistake of grabbing the pork sausage because the final product was delicious–total comfort food.
The creamy sauce paired with the savory meat was a perfect combination. Although many times my sleep deprived state results in me making mistakes that don’t turn out so well (like forgetting where I have set my keys), this time sleep deprivation worked in my favor. If only I could always be so lucky!

Pork Sausage Stroganoff
Makes 4 to 6 servings

1 lb. pork sausage
3 slices bacon, diced
1 large onion, chopped
3/4 tsp. salt
1/4 tsp. paprika
Dash of pepper
1 can mushroom soup
1 cup sour cream
Hot buttered noodles (I actually used whole wheat rotini this time around and it was fabulous!)

1. Brown sausage with bacon. Add onion, cook until tender but not brown, drain off the excess fat.

2. Add seasonings to meat mixture. Stir in soup. Cook slowly; uncovered, 20 minutes, stirring frequently.

3. Stir in sour cream, heat through, do not boil. Serve over hot noodles.

Love it! Creamy sausage sauces are the bomb.

I do a similar stroganoff that my mom used to make. I wonder if his mom got the recipe from the same place my mom did. Namely the Cambells Soup cookbook from the 50’s. :) I did it once with chicken and bacon, that was wicked good too.

I love how simple this looks, yet so hardy and satisfying. I’ve gotta pot luck Monday and now I know what I’m going to make.

The 5 minute cake so much fun. Shannon make most of it and got a kick out of seeing it rise in the microwave. Thank so much.
