To me it looks like either a type of noodle or pastry dough.
They are noodles, I’m sure… too heavy-looking for rice. So they must be either wheat-based, or soy-based… that bean curd guess sounds likely. I think I agree they are bean curd noodles!

You’re all wrong. It’s that stretchy stuff we used to make potholders on looms when I was a kid.
I have no idea! They look like noodles but they look very fibrous. I’m going to guess noodles anyway. :)

Why I think it’s Kanpyō (干瓢?)
They look like thin Guimauve threads to me (Marshmallow in French)… but they obviously are not! I don’t know what Kanpyo is so I’ll follow this recipe with very much attention!

I think they are Japanese gourd strips called kanpyo. Can be used in sushi. Usually seasoned or marinated. Very yummy.

That’s Kanpyo! It is usually used as the center ingredient of Norimaki.
