Not just any chicken sandwich.

I thought I would share a couple more sakura finds that I thought were interesting. The first is a manhole cover that Squirrel and I came across on our daily walk. Isn't it pretty?

 
 
 
The second was a bottle of Canada Dry Sakura Mist. I would definitely drink this again. It was light and sweet.
 

Finally, some sakura pudding. I loved the presentation of these 2 little pudding cups.

 

Pulling off the pretty packaging revealed this:
 

 
 
Mr. Fuji and I enjoyed these. The pudding was fruity and creamy. The part I enjoyed most was a preserved cherry blossom at the bottom–beautiful and yummy!
 
 

 
Life is busy! I had forgotten how stressful moving is. Everyone in our family is feeling the effects of trying to get everything done.
 
 
Even if all I had to think about was moving, it would be a ton of work. But then if you factor in life in general, being a mom, and going to work . . . it can be downright overwhelming! With everything being so busy I needed something I could whip up quick for dinner tonight that would have more nutritional value than the mac 'n cheese I was tempted to make. I decided that chicken sandwiches were in order. These aren't just any chicken sandwiches. This is a recipe that I got from my dear friend Ms. K. She is an amazing cook, although she will tell you otherwise. She loves this recipe because it is simple and quick, the kids will eat it, and yet it's not something that she is embarrassed to serve to her friends.
 
Ms. K's Chicken Salad Sandwiches
1 can (354 g) of chicken breast (you could substitute tuna fish, but I prefer chicken)
2 Tbsp. mayonnaise
1/2 can of mandarin orange wedges
1/4 red onion, finely diced
handful of shredded cheddar cheese
herb salt
slices of whole grain bread
 

1. Drain the can of chicken breast and empty contents into a medium size bowl.

2. Add the mayonnaise to the bowl and mix well with a fork, shredding the chicken in the process.
3. Add the mandarin oranges, and mix well, smashing the oranges as you mix (you don't want whole sections of orange, just tiny little bits mixed throughout).
4. Add the red onion and cheddar cheese and mix.
5. Add the herb salt to taste.
6. Spread the mixture between to slices of bread and then eat!
 
**When Ms. K gave me the recipe, she said there are no set measurements, she just adds stuff until it looks good. So, if you find that there is too much or too little of something, then adjust things to your tastes!
**This would also make a yummy pita pocket or wrap.

Wow, this chicken sandwich sounds yummy! I never thought to put mandarin oranges in! Sounds yummier than the typical red grapes. Thanks! I think I might try it this weekend!

I’m going to have to try that chicken sandwich recipe, it looks great! Take care, moving is wonderful and evil by turns. (Which I’m sure you know, just commiserating.) :)

mmm, that might be pretty good with shredded chicken-style seitan (thinking in veggie terms here.) the mandarin oranges seem key! pretty sakura stuff too!

Where did you get the Canada Dry ‘Sakura Mist’ from? I’d like to have a bottle just for the label.

I got it at the convenience store right down the street from the Hyatt that is next to Roppongi Hills. If I remember correctly it was an AM/PM. It is on TV Asahi Dori, and the approximate address is Moto-Azabu 3-chome 1.
