Simple Potato Salad

Happy Labor Day to all of you in the US! I hope you are doing something fun today. . . I've been busy in the kitchen all weekend trying out some new recipes. Some were successful and a few were not. Saturday evening the Fuji family went to a Homecoming party in Irvine for some friends who just moved back to the US from Tokyo. The party was a potluck and we were assigned to bring a side dish.
When I asked Mr. Fuji if he had any preferences, he requested his mom's potato salad. Since I aim to please, we took a heaping bowl of potato salad and came home with an empty bowl. I think it was a hit!

Simple Potato Salad
12 servings

12 large potatoes (I used Russet), peeled and cut into medium-sized chunks
12 large hard boiled eggs, chopped
1 1/2 – 2 c. mayonnaise
2 Tbsp. mustard (or more to taste)
salt and pepper, to taste
paprika

1. Put potatoes into a saucepan. Add 1/2 teaspoon salt. Add water until potatoes are covered. Bring to boil, reduce heat and simmer, covered, 15-20 minutes, or until done — a fork can easily be poked through them.

2. Add eggs.

3. Start by adding 1 1/2 cups mayonnaise and mix well. If the mixture seems too dry, add more mayonnaise until you have reached your desired consistency. Add mustard and mix well.

4. Season well with salt and pepper.

5. Transfer salad to serving bowl and sprinkle top with paprika. Cover bowl and put in refrigerator to chill.

6. Chill for at least 4 hours before serving.

i think i’ll try this receipe sometimes i have patatoe and i don’t know what to do except french fries

In 18 days you will drive the 40 miles to your parents’ home, bringing 9 bowls of really good salsa?
