Mr. Fuji’s Creamy Crockpot Porky Chops

Yep, Mr. Studly Mashed Potato Mashing Man was back in the kitchen yesterday cooking for us. Yes ladies, you should be jealous! He took control of the kitchen yesterday like a pro and by the end of the day we had an amazing meal to feast on.
Mr. Fuji grew up taking advantage of the time his mom spent cooking for their family to talk to her, knowing that he could count on her listening ear. She in turn would take advantage of his presence and ask him to help out with tasks like shredding cheese or cutting tomatoes. As a result she also taught him some basic cooking skills and helped him to feel comfortable in the kitchen. Now Mr. Fuji actually enjoys (gasp!) spending some time in the kitchen, and we definitely enjoy the fruits of his labor.
One of our favorite things he makes are his incredibly yummy (and incredibly sinful) creamy crock pot porky chops. Mr. Fuji’s mom used to make these pork chops when he was growing up. When he left for college it was one of the recipes that she sent him with, along with a small crockpot. Moms are smart, aren’t they? Mr. Fuji has since mastered this recipe and it has become a favorite of our family.

Mr. Fuji’s Creamy Crockpot Porky Chops

1 can (10.75-oz.) Cream of Mushroom soup
1 package (8-oz.) cream cheese
1 packet (0.4-oz.) of Ranch dressing mix
4 tablespoon butter
4-5 pork chops (bone-in, boneless, mixed, whatever you want!)

1. Put butter and cream cheese in a bowl, and microwave for 1-2 minutes to soften the cream cheese and melt the butter.

2. Add cream of mushroom soup and Ranch dressing mix and mix until ingredients are somewhat blended together (it’s okay if it’s a bit chunky). At this point if you desire a thinner sauce, add 1/2 cup of milk and mix (we usually don’t because we like a thicker sauce).

3. Place pork chops in bottom of crockpot and pour mixture over the top.

4. Cook, covered, on high for 5 to 6 hours (or on low for 7 to 8 hours)*, until the meat is tender and easily pulls away from the bone or breaks apart (if using boneless). (The edges may start to get very brown towards the end of cooking time–don’t worry, that’s normal!) Serve over rice.

*Because different slow-cooker models cook at different rates, the total time is presented as a range. Check for doneness at the low end of the range (but not before, or the escaping heat will slow the cooking). If the food is not done, continue cooking to the end of the suggested range.

Those look wicked good. Are guys who cook really so rare? All the men I know cook, to one degree or another. I do all the cooking in my house.

Mmmmm, I love that recipe! I use all the time! I actually omit the butter, I find it tastes just as good with a few less calories!

Bob– Wicked is right! I think guys who cook are becoming a bit more prevalent, but most of my friends husbands don’t do much in the kitchen besides making themselves a sandwich or being in charge of the grilling!

Misha– Great minds think alike! That’s what I do usually when I make it! I sometimes use neufatchel cheese instead of cream cheese as well–again cutting down on fat and calories! But, when Mr. Fuji is cooking…well, let’s just say LOTS of butter is involved. :-)

Okay, this recipe is the next step in my pork chop journey! I love the swine- pulled pork, tenderloin, carnitas, sausage, ham, bacon, etc. But for some reason, I always struggle to make a yummy chop. If this recipe doesn’t help me I don’t think anything can!

This looks really good and I’d like to give it a try but I’m not crazy about ranch. Is the flavor strong in the dish? Think it will still be tasty with out it? Thanks!

Ingrid– No, the ranch flavor isn’t strong at all! In fact, when you taste it I don’t really think you taste ranch. It melds with the cream cheese, soup, and butter flavors to develop a flavor all it’s own. I think it would be a bit bland without it, since you are getting a lot of seasoning from the packet. You could try replacing the ranch with another flavor though, like Italian!

I just put it in the crockpot for dinner tonite. It’ll be a New Years special. My husband will love it-it’s definately a mans meal…but I think I’ll love it too. Happy New Year to Mr. Fuji and family!

I am on the cooking ministry, at my church, and I am responsible for the Wednesday night meals. I love to keep it fresh and not repeat menus so I am always looking for something easy, yet will please a crowd. I am definitely going to make this recipe. I do, however, have a question. I am going to be cooking about 20 pork chops and only have 1 crockpot. Could I do this in some roasting pans and cook at about 200 degrees for the allotted amount of time, or would they be dried out? I guess I could do these in batches an just reheat the other batches together. Anyways, I am definitely going to do this one for my family too.
