How is it possible that it’s already the middle of June? The past few weeks have been a blur. We have been in the whirlwind of the end of school activities, Mr. Fuji and I took an anniversary trip to Cancun, Mexico, the Fujilings have been doing Irish dance camp, and we have weathered a pretty nasty stomach bug, among a huge grab bag of other things. I’ve snuck some cooking time into some of the nooks and crannies of our days and now can’t wait to share some of that with you! First up are these California Avocado Bell Pepper Quiche Cups that I whipped up for California Avocados. The thing I love about these is that there is no waste and they are healthier than the typical quiche because the “crust” is a juicy half of a bell pepper and creamy chunks of California avocado add richness and a dose of healthy fats.
