Squirrel brought home a bug from the States and has been sick ever since. After 4 days of cleaning up baby barf I thought I had escaped getting sick. WRONG! Yesterday when my head felt like Mt. Vesuvius just waiting to blow I had to admit that my immune system wasn’t as great as I had been proudly thinking it was. So what do you do when you are achy and just generally feeling gross? If you’re me, you BRING ON THE COMFORT FOOD! When I’m feeling like I am now, my favorite home remedy is a pot of my mom’s chicken noodle soup. The problem with that remedy is that I would have to cook the soup myself (that’s what I get for living so far away from my mom). In my current condition I just couldn’t bring myself to put in the time and labor required to bring that to fruition. What I needed was comfort food that required very little preparation. Enter, Creamy Italian Chicken, and voila, problem solved!

LFM’s Creamy Italian Chicken
1/4 cup water
5 boneless skinless chicken breasts, cut into strips
1 package Italian dressing mix
Combine these ingredients in a crock pot and cook for three hours on low.
Beat together:
1 can cream of chicken soup
1 8-oz. package cream cheese
1 cup chopped mushrooms (optional) (portabello mushrooms are my favorite pick)
Add to crock pot and cook one more hour on high.
Serve over rice or noodles.

I’m going to have to try your recipe. I have some cream cheese I need to use up and this looks like a good way to use it. Sorry you are sick. Being sick is horrible when you have kids. You want to lay on the couch and just die but kids want you to continue to play, fed and care for them. Get better soon
That sounds so good, I wonder if tofu can be switched out. Or maybe I should re-try the fake chicken again.
