Eggs Poached in Avocado Salsa Verde

Move over Eggs in Purgatory, there’s a new kid on the block.  Eggs poached in a creamy avocado salsa verde (served with slices of avocado of course) is my newest creation for California Avocados and one of my favorites yet!  This recipe is a perfect breakfast or brunch recipe (or breakfast for dinner)!  It can be made Paleo by ditching the cheese.  Pop on over to The Scoop to grab the recipe!
