I am annoyed. Scratch that. I am super annoyed! It is April 28th and it is SNOWING! Excuse me? May starts on Monday and we have cold white stuff falling from the sky? Not cool. We had a long, cold winter this year and a cold spring and it’s starting to take its toll on everyone. I volunteer in Squirrel and Bug’s classrooms at school every week and I have experience, firsthand, how too many days of inside recess turn the kids into energetic balls of insanity. I think everyone is counting down the days until the end of school and hoping for warmer weather! Although the weather may not reflect the impending arrival of warmer weather, my cooking definitely has. I’ve been craving lighter dishes and brighter flavors and we have been eating more fresh fruits and vegetables and less cooked. As a result, I’ve been whipping up more salad dressings and dips to go with our fresh produce, like this spicy avocado ranch dressing that I developed for California Avocados. Ditch that squeeze bottle filled with thick white stuff that you picked up at the grocery store and whip up a batch of this. Not only is it filled with ingredients you can pronounce, but it’s just darn tootin’ delicious! Plus, it has avocado in it…need I say more? From being annoyed, now this spicy avocado ranch dressing made you calm. Well, preparing a salad is the best therapy I guess. From bad mood to good mood, I’ll feel good just eating with this spicy avocado ranch dressing. Oh so good!
