Cheater, Cheater, Whoopie Pie Eater!

in Dessert, Recipes by Type

I needed a batch of goodies for a group of teenagers this weekend, but I was low on time. What to do? As I was pondering this problem I decided to make whoopie pies. I pulled out an idea that had been sitting unused in my head for a while, and voila! Out came my cheater whoopie pies.

They aren't as good as making these totally from scratch, but if you don't have a lot of time and are feeding kids/teenagers they are a great solution! You may even already have the ingredients in your pantry.

Fuji Mama's Cheater Whoopie Pies
Makes approximately 16 cookies

-1 (18.25 oz) cake mix (whatever flavor you like, I used red velvet)
-3 large eggs
-1/3 cup vegetable oil
-3/4 cups water
-1 (1 oz) box Jell-o Instant Pudding Mix (whatever flavor would compliment your cake mix flavor…sugar free-fat free white chocolate was what I happened to have on hand)
-1 (12 oz) can frosting (or 2 if you want more filling) (again, whatever flavor would go best with the cake mix you picked)

1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
2. Blend cake mix, eggs, oil and water in medium bowl at medium speed for one minute.
3. Add pudding mix and beat another minute.
4. Drop by rounded spoonfuls onto cookie sheets.*
5. Bake in preheated oven for around 12 minutes or when toothpick inserted in center comes out clean.
6. Let cool on the baking sheet for a few minutes before removing to cool on wire racks.
7. Spread frosting between two cooled cookies.

* I used a cookie scooper so that each of my cookies would be the same size.
