Hi, my name is KD and I am a chocoholic. I can’t remember the last time I could get through the day without having a piece of chocolate. Dark chocolate, milk chocolate, white chocolate, hot chocolate! I love them all!
In preparation for Valentine’s Day and in honor of my fellow chocoholic, LFM, I present you with the easiest and most delicious truffle recipe! It is always a hit and it is so versatile.
30 sandwich cookie (I prefer Oreos)
1 8 oz package of cream cheese
8 squares of Baker’s Chocolate
1. In a food processor grind the cookies into a fine mixture.
2. Add the cream cheese and continue to pulse until it is all incorporated. It should look like a thick brownie batter.
3. Place the mixture in the fridge to chill for a couple of hours. By doing this it makes it easier to roll into balls later.
4. Once chilled roll the mixture into tablespoon size balls or use a melon baller. Place the balls onto a cookie sheet that has been lined with wax paper. Put the sheet into freezer until completely frozen, I usually leave them in over night to ensure that they are.
6. Remove the balls from the freezer and immediately dip in melted chocolate. Place the chocolate covered truffles back onto the wax paper to harden. Serve immediately or store in the fridge until you are ready to serve them.
The fun thing about this recipe is you can use different flavors of Oreos and chocolate so it is never the same. My sister made this using Trader Joe’s Peppermint JoJo’s one year at Christmas and they tasted just like Thin Mints. They were delicious! If you are near a Trader Joe’s during the holidays I recommend picking some up.
I had a lot of fun experimenting with different toppings as well as cookie and chocolate combinations. This time I tried these truffles rolled in flaked coconut, cocoa powder, and powdered sugar. I love coconut so that was my personal favorite. You could also try chopped nuts or toffee. Mmmmm! ( If you are going to roll them in something make sure the truffles have thawed slightly.)
