Strawberry Frappé

Happy Valentine’s Day!  One of the things my family loves is when I make a big batch of a green smoothie to share with them in the mornings.  My kids thing green smoothies are the best things ever.  I figured they would be equally happy with more of a treat coming out of the blender for Valentine’s Day, so I whipped up a healthier take on a strawberry milkshake.

When the Fujilings saw that I was making something with strawberries, they were immediately on board (the Fujilings have serious places in their hearts for strawberries), and once they each got a glass for themselves, they were extremely happy.  (Bug insisted that unicorns make people happy too, and must be in her picture.)

Bug loves Strawberry Cream Smoothies

So whip up a sweet treat to serve to those you love.  You could call it a milkshake, but frappé just sounds more romantic, don’t you think?  Happy Valentine’s Day from the Fuji Family.

Tandem Strawberry Frappé

Strawberry Frappé

Makes 2 servings

1 cup unsweetened coconut milk
1 1/2 teaspoons almond butter
1 teaspoon honey
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
7 ounces frozen strawberries
1 large frozen banana

1. Process the ingredients in a blender until smooth. Serve immediately.

I LOVE almond extract! I use it a lot in baking, using a bit in place of a bit of vanilla extract. If you love almond flavor, then you’ll love it!

Is the coconut milk the thick kind from a can or the thin shelf stable/refrigerated coconut beverage type?

You can use either! For this I used the coconut milk that you can find in the refrigerator section near the milk in supermarkets.
