Truth #3: Pumpkin chocolate chip cookies are REALLY yummy.
Truth #4: Squirrel’s mommy has talked herself into feeling less guilty about feeding Squirrel sugary treats because they have heart healthy fiber packed pumpkin in them.
Pumpkin Palooza just wouldn’t be complete without the inclusion of my favorite pumpkin chocolate chip cookies.
These cookies are what got me started thinking about pumpkin in the first place. When October creeps closer I always start thinking about these cookies. My mom started making us these little gems when I was a little girl. I can’t remember a year without them. They are super moist and flavorful, and again, we’re putting together the health fighting duo, so what’s not to love? I have carried on my mom’s tradition of making these cookies and intend to continue until I can no longer wield a wooden spoon and a measuring cup. I want Squirrel to remember that I loved her enough to make her these cookies every year.
Dare: I dare you to make them.
Pumpkin Chocolate Chip Cookies
Makes about 3 dozen
1 c. sugar
1/2 c. vegetable oil
1 egg, beaten
1 c. pureed pumpkin
1 tsp. milk
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. chocolate chips
1. Preheat oven to 375 degrees Fahrenheit.
2. In a large mixing bowl, mix sugar and oil, then blend in egg, pumpkin, milk, and vanilla.
3. In a separate bowl, mix flour with rest of dry ingredients, then blend into wet mixture. Stir in chocolate chips.
4. Drop by teaspoonfuls onto greased cookie sheet. Bake for approximately 10 minutes.

As soon as I have a reliable oven, I will make these. Except I have to find some chocolate chips first (they don’t do them here in any proper quanitity).
Phoe–These cookies are actually FANTASTIC with chocolate chunks in them, in place of the chips. Just get your favorite chocolate bar and chop it into coarse chunks and use those instead!
I just decided on my way home today that what my family needs this weekend is a batch of pumpkin chocolate chip cookies. I’ve had them made by the hands of other bakers before, but haven’t ever made them myself. I needed a recipe and — lucky me — here you are with just the thing.
I absolutely LOVE LOVE LOVE pumpkin cookies!! My grandma likes them with raisins, but I prefer the chocolate! Oh man, now I want some…dang it…must fight..Ahh who am I kidding. I’ll be at the store!

My favorite pumpkin chocolate chip cookie recipe has oats in it, but is otherwise similar. I crave them so often, I find myself drawn to Libby’s canned pumpkin all spring!

I did it! About a week late, but better than never! They taste good – I put them in cupcake cups, and didn’t have any cinnamon unfortunately – would have been better with a little spice. Ah well – I am taking them to a potluck dinner tonight!

Can I replace the vegetable oil for softened butter? I have that in my fridge but no vegetable oil in the pantry…sorry if that is a crazy question.
