We are currently in the middle of a crazy wind and dust storm here in Utah.  I’ve watched a trampoline, sandwich board sign, and a trashcan fly by so far.  So while we hunker down and hope we still have a roof tomorrow morning, I’m going to share a new recipe with you!  I have had a hard time keeping it under wraps because I was so excited!  I am one of the new ambassadors for California Avocados for this year’s growing season, so I will be sharing a new avocado recipe twice a month on their blog, The Scoop.  If you know me at all, you know how much I love avocados.  It’s hard to grow up in Southern California and not love them!  My first recipe of the growing season is for California Avocado Ramen, and I had a ton of fun thinking outside the box a bit.  These bowls of noodles use avocados in not one, but two different ways!  So hop on over and have a read!

Love this creative recipe! Throw some nori in there and it’s set!

You would love Raku Ramen in SLO. They have a “pesto ramen” that combines the formidable tasty forces of tonkatsu broth and pesto with these random “spinach ramen” noodles. Gotta fight ramen fatigue somehow, right?
