Avocado Chickpea Salad Croissants

I have always loved the croissants stuffed with chicken salad that always seem to be served at baby showers or other luncheons, so I decided to come up with a fresh twist on them and whipped up a chicken chickpea salad, including some of the normal ingredients, like halved grapes and creamy mayo-based dressing.  I also added some chopped California avocado for extra creaminess and flavor.  They are so easy to make and were such a hit that I will definitely be making them again.  If you are looking for something different to try, need something new for Meatless Monday, or are a plant-based eater, this one is for you!   The recipe is over on The Scoop for you to grab!
