She was every bit as delightful and wonderful in person as I hoped she would be. I hope you enjoy the deliciousness that she has cooked up for you today! Quinoa, goat cheese, and mushrooms are three of my favorite things and this recipe looks absolutely to-die-for!
=============================================================
On my blog, eat. live. travel. write, I chronicle my culinary adventures near and far. I was first attracted to Rachael’s blog because of her love for all things French and the wonderful way she combines cultures in her cooking, something I strive to do also.
One of my favourite things to do when I travel is discover new foods. I will often buy a cookbook or a recipe magazine so that I can attempt to recreate the flavours of my travels at home and share with my friends. This recipe is an adaptation of an amazing vegetarian dish discovered at the Hacienda Cusín in Ecuador (before I was blogging) that is so hearty even die-hard carnivores will forget it’s meat-free! The crispy quinoa patties give way to a cheesy-mushroom center that literally melts in your mouth!
Quinoa patties stuffed with goat cheese and mushrooms
4 Servings
Prep: 30 min. Cook: 15 min.
Ingredients
For the patties:
2 cups cooked quinoa
2 eggs lightly beaten
1 cup panko breadcrumbs
3/4 cup whole wheat flour
1/4 cup Parmesan cheese, grated
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 cup dried porcini mushrooms, soaked in boiling water for 15 minutes drained and chopped into small pieces
OR
1/2 cup cooked portabello mushrooms, small dice
8 small cubes of hard goat cheese
vegetable oil for frying
For the sauce and garnish:
1 cup fresh cherry tomatoes pulsed in food processor with 2 cloves garlic simmered until it reached a runny sauce consistency.
about 10 fresh basil leaves finely sliced for garnish
Directions
Cook quinoa according to directions on package. Allow to cool.
Mix the eggs, panko and parmesan until lightly combined. Add the quinoa and mix thoroughly. Add the flour and herbs. The mixture will be quite sticky at this point.
Form small patties with your hands, slightly larger than golf balls. It should make about 16 patties. Flatten them slightly and make an indentation in 8 of the patties. Into this, place a cube of cheese and some pieces of mushroom. Place another patty on top of the filled ones and squeeze gently to form a ball. Once there are no “seams” visible, flatten slightly with the palm of your hand.
Heat the oil on high in a large frypan, turn the heat down slightly and fry the patties until golden in colour, on both sides about 12-15 minutes.
Drain the patties on paper towel.
Spoon some of the tomato sauce into a shallow dish. Place the patties on top of the sauce and garnish with basil. Yield: serves 4

@RavieNomNoms,
Thank you – it really is :-)
I love this recipe. I never worked with quinoa, would it be similar to how you make rice?
@Joy,
Similar, yes. The directions will vary depending on whether is it quick cook quinoa or not. It’s very easy!
Two of my favorites together! Looks terrific Mardi…and Rachael, hope you are improving daily from your tonsillectomy. Have to eat girl!
@Barbara | VinoLuciStyle,
Aw Barb, we raised a tea-cup to you in July!
Can i first say that the recipe sounds amazing.. Now can I say that when I first read your opening sentences my heart dropped? My mind read “I had the pleasure of meeting her in prison this last July” and I spit my tea on my key board. I was thinking to myself, “I know she didn’t post about going to prison” Of course I immediately reread it and got the right words.. So thanks for both the lovely recipe and the laughter today!
@elaine,
LOL! Now *I* am laughing at that!!!
This looks amazing. I almost bought some Quinoa yesterday but had no idea what exactly to do with it, now I do, thanks!
@Mommyof2Girlz/Steph,
It really is a great recipe – messy but yummy!
Lovely recipe from Mardi!
@Jen @ My Kitchen Addiction,
Cheers Jen!
I’m not normally a “patty” person… I don’t even really like burgers. Well, except for the occasional In N Out when the craving hits. These, though, are absolutely tempting. I love quinoa (blogged about it today myself!) and the addition of the mushrooms is perfect. Thank you for a most amazing recipe and post!
@Kim (Liv Life),
It’s funny, in the last month I have made these and arancini and all of a sudden I have become a “patty” person myself!! These are so good you must try them!
Love quinoa! This is a great way to use it :)
@Victoria,
Thanks! It takes it a little bit above the usual way of serving it!
Wonderful recipe. I have only used quinoa as a salad. I really enjoy the nuttiness flavor it provides. Have you tried toasting the quinoa in a skillet before boiling it? It brings out even more of that wonderful flavor.
@Jason’s BBQ Adventures,
No, I haven’t but will definitely try that next time.
I am always looking for something new to do with quinoa. Thanks for sharing.
@Petes,
You’re very welcome!
love meatless recipes like this. looks so darn good!
@LimeCake,
Thanks – you won’t miss the meat at all!
I collect quinoa recipes for some strange reason and I can’t wait to try this one! It looks delicious!
@Mags,
I am slowly building up my quinoa recipe collection too!
I’m sitting here thinking why I’ve never thought of making quinoa patties. They’re brilliant!
@Joy,
Joy you should definitely try them – they’re awesome!
I became a big fan of quinoa this year, and this looks just amazing. I’ve never thought of turning the quinoa into patties. This would be a great dish for my vegetarian friends!
@EMK@eat, drink and be merry,
It’s a great dish for vegetarians and die-hard carnivores like my husband alike!
Quinoa AND mushrooms? I will think I’ve died and gone to heaven. I must make these!
@Misty,
I know – a great combination, right?
Hey I’m always up for red meat burger alternatives! Looks good!
@Bianca @ South Bay Rants n Raves,
It’s really hearty, you won’t miss the meat.
Hiii, one of my friends suggested that blog i really like it. very usefull.
Thanks and best regards
N. Tunch
this looks great… one question though. i have a wheat allergy… any suggestions on what kind of flour would best be subbed for the whole wheat flour?
thanks!
@lori,
I am not sure about that but I imagine any gluten free flour might work. I have heard good reports of chick pea flour in meat patties, so perhaps that?
I made these on Sunday night-they were a huge hit with my husband and I absolutely loved them. Like a few others above, I never thought of using quinoa for a patty. This recipe has opened up a whole new avenue of possibilites. Thanks so very much.
You’re a very good writer!
