I just realized that a bunch of my recipes have been posted over on The Scoop and I didn’t know! So get ready for some California Avocado recipes coming your way! I love working with California Avocados, not only because avocados are one of my all-time favorite foods, but also because they give me great themes that I then have to create recipes for, which always push me in directions I probably would have never gone on my own. There’s nothing like being given parameters to work within to help me think outside the box! This particular recipe was one that I loved creating. Tonkatsu (breaded, fried pork cutlet) was a favorite dish to go out for in Japan. I decided we needed a lighter version and so this avocado katsu was born. This looks sooooooooo good! What a cool idea! I went to Tokyo a few years ago and had amazing tonkatsu. Can’t wait to try this!!
