Here we are again, getting our kiddos ready to go back to school (or in our case, already back in school)! I always loved this time of year growing up. I loved starting the school year with a new outfit, new pencils, a new binder, etc. Now as a parent, I think it’s a great idea to remember that love of starting fresh, and adopt a similar attitude towards packing school lunches. Keep it fun, fresh, and new! In the spirit of keeping things fun, fresh, and new, Attune Foods asked five moms, including yours truly, to contribute recipes to a Back to School Lunch Ideas E-Book, using either their Uncle Sam cereal, Erewhon cereal, or grahams.
My contribution is an easy recipe for Baked Chicken Katsu. Click here to download the free cookbook and get my recipe for Baked Chicken Katsu, plus all of the other fantastic recipes created by a group of talented moms.

Thanks for the free book! I was pretty stoked to see that you used oats rather than the regular panko. Makes it so much healthier by baking too! So excited to try those bars and your recipe. I’ve been trying to eat healthier nowadays so this is a big big help.
When I was growing up in Thailand, my mom would sent me off to school with a bento too. Pork Katsu is my most favorite thing to take. :)
Hi! Love the Katsu chicken lunchbox meal! Can you tell me where you got those sweet green leaf picks ? I think they are? in the cherry tomatos? TOO CUTE! THanks!

A debt of gratitude is in order for the free book! I was really stirred up to see that you utilized oats as opposed to the standard panko. Makes it such a great deal better by preparing as well! So eager to attempt those bars and your formula. I’ve been attempting to eat better these days so this is a major huge assistance.
This post truly made my day. You can not imagine just how much time I had spent for this information! Thanks!
