Summer Bibimbap

Bibimbap (“bee-beem-bawp”)…saw that 4 times fast and see if it doesn’t put a smile on your face.  It does mine!  It’s just a fun word.  But it’s an even better dish and one of my all-time favorite foods!  It’s a Korean rice bowl, and I’ve got a reimagined version that includes my beloved California Avocados that I’m sharing over on The Scoop.  My version is easily customizable—you can use whatever protein you like and switch out the veggies for what you’ve got on hand, is in season, or just what you’re craving.  It’s easy to make all the pieces ahead of time and then assemble when you’re ready to eat, so you really have no excuse for not making this.  Go grab the recipe!!

I have never eaten avocado with rice, gotta try this recipe to know the taste, thank you for sharing!
